Who doesn’t love Oatmeal Raisin Cookies!!! This happens to be my all time favorite cookie. Chocolate chip cookie would be the runner up for me.
I have this really great recipe if you like soft and fluffy cookies. One important thing that makes an oatmeal raisin cookie is RAISINS!!! So if you’re not big on raisins you can opt out or put less raisins in than what my recipe calls for.
Lets get on to the Ingredients….
- 1-1/3 cups butter (2 cubes and 1/3 cube)
- 3/4 cups brown sugar
- 1/4 cups granulated sugar
- 2 tablespoons water
- 2 cups flour
- 2 1/2 cups dry oats (Good brand oatmeal, I used Quaker Oats)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup raisins
- 1 teaspoon cinnamon
- 2 eggs
- Optional: 1 cup chopped walnuts
Get your oven ready at bake 350. While the oven is heating up lets start getting our cookie mixture ready! I like to use the flat beater with my kitchenaid since we’re making a thick dough consistency.
Start off by creaming butter (meaning mix butter and sugar)
Then add 2 eggs to the mix and then the rest of the wet ingredients and mix thoroughly.
In another bowl, mix all your all dry ingredients and sift into the bowl, besides the raisins and walnuts.
Slowly add your dry ingredients into your wet mixture.
Then add raisin and nuts last.
After the mixture is ready, get good amount and lay them out on a cookie pan (I also like to use parchment paper cause its easier to clean!)
Bake for 13-15 minutes until light brown.
